Restoration Insulation

So, my sea-sand 66 has been stripped clean. No interior, no rubber, no windows...you get the picture. It is headed off to be painted next week inside and out. Several questions
1) Does anyone have great ideas about interior insulation
a) Pan (under the rubber mat, the seats etc
b) body panels like doors rear fire wall etc
2) What about engine compartment - it will be vigin new paint and nothing else - do I buy VW original insulation or is the there a better option
3) undercoating - I know to use por-15 on pan and exposed steel, but waht about additional paint or undercoating material to protect the por-15?

Any other things to think about with the bug this far apart?
