I can't comment on the laser temp readings, but a common way to check your engine temp is to touch your oil dipstick handle. VW introduced the dual port to for two reasons. Adding a few extra horse power was for marketing against newer designs in the 1970's. Why did the last one get chewed up? Trying to use a 12 volt starter with the wrong fly wheel?

Binding in neutral? Could it be the opposite brake drum hanging up?

How hard was it to remove the axle nut? If it didn't take a lot of effort, it wasn't on tight enough. An axle nut that isn't torqued to the proper load will damage the hub assembly.
